Spicy Chipotle Quesadilla


Serves 2

-Natural Grains Tortillas

-2 cups of shredded mozzarella

-2 cups of shredded chicken (leftovers are great)

-3 Tbsp. of mayo

-1 Tbsp of chopped chipotle


Warm up a skillet to medium heat warm up the tortillas for a couple of seconds on each side. Lower the heat to med-low, and begin by adding your cheese to each tortilla, followed by the shredded chicken and cover. Toast to preference and flip, in the meanwhile in a small container mix the mayo and chipotle. Once your cheese is completely melted, remove from heat and spread the chipotle mayo in between the quesadilla.

Garnish with avocado and enjoy!
