Breakfast Chilaquiles

Delicious breakfast chilaquiles! Fast and easy, I love this recipe because is much simpler than the red Chile chilaquiles because there is no need to cook and prep the red Chile sauce. This recipe serves 2-3 people when served with our delicious vegan refried beans!



Ingredients

Serves 6

7 Organic Non-GMO (NGT)

1 Roma Tomato (diced)

1/4 of a Md Onion

Cilantro (optional)

Jalapeño (Optional)

2 tbsp of safflower oil

1/2 tbsp of garlic salt

1/4 tbsp of black pepper

1/4 of no salt seasoning

2 tbsp of tomato sauce

1 tbsp of mild-spicy salsa


Directions

Begin by cutting all the tortillas in 1x1in small squares. Meanwhile heat up the oil in a medium size pan on a medium-hot flame, once hot add the tortillas and spices and let them golden for about 4 min each side.



While the the tortillas are frying cut all the veggies and throw them in the pan, mix well and let the veggies soften for about 3 minutes.

When the veggies soften add the tomato sauce and salsa, I used store bought roasted tomato salsa. If you like spicy you can switch the ratio and add 1tbsp of tomato sauce and 2 of the salsa.

Incorporate well and served with our delicious vegan refried beans(recipe online) Top off with your favorite cheese and sour cream(optional)


This recipe is done within minutes, is delicious and super simple. I’m personally not a fan of egg but many people like to top of their chilaquiles with a pouched egg, this is an option for all egg lovers out there! This recipe is great for gain weight, cheat day is filled with healthy carbs, veggies and tastes amazing!!!!!!!​
