Chicken Salpicon

So easy, so fast, made with left over chicken, salad with avocado and a healthy homemade dressing!!


Serves 6

2 cups leftover chicken

1/2 med red onion thinly sliced into half cirles

1 cup of seeded chopped cucumber

1 cup diced tomato

3 large avocados diced

2 cups of chopped greens

1/2 cup mayo or favorite dressing

12 Natural Grains Tostadas

1/2 lemon

favorite salsa


1 cup of red wine vinegar (can be white)

1 cup of safflower oil (or oil of choice)

3 tbsp of lemon juice

1/2 tsp salt

1/2 tsp pepper

1/2 tsp oregano


​1. Prepare the vinaigrette a few hours before or overnight if possible. Blend everything in the blender until homogenized. Refrigerate for a few hours or overnight.

2. Mix chicken and veggies in a bowl.

3. Spread your dressing over tostada and add the salad

4. Drizzle with lemon and salsa
