Delicious creamy zucchini stir fry with tomato, onion, garlic
3 zucchini, chopped (650 gr)
2 red tomatoes, chopped
1/4 onion, finely chopped
1 clove of garlic, chopped
1 jalapeño or serrano pepper, optional
1 cup cooked yellow corn
Butter or oil, to taste
1 cup shredded monterey jack cheese
1/2 cup of heavy cream
1/2 cup of roasted chiles (poblano, NM or anaheim)
Salt and pepper to taste
Melt the butter or heat the oil.
Add the onion and garlic and cook about 3 minutes or until it looks smooth and transparent.
Add the chili (optional) and the tomato. Cook 3 to 4 minutes or until the tomato softens and disintegrates a little.
Add the zucchini and corn. Season to taste with salt and pepper.
Cover the pot and cook about 8 to 10 minutes or until the zucchini is soft. I do not like the vegetables to be very soft, if you do, cook a few more minutes or until they are the way you like it.
Add the cheese, cream and the roasted chiles just at the end of the cooking. Cook a few more minutes and serve with some of our delicious Natural Grains Tortillas.
